Preheat your oven to 400°.
Roll out two sheets of thawed puff pastry dough so they sit flat.
Line up a sausage link at one end of each of the puff pastry sheets, trimming the ends if needed.
Roll each sausage link into a log, then cut each log into one inch pieces. Secure each roll with a toothpick.
Add the rolls to a parchment-lined baking sheet and bake for 20-25 minutes.
When the rolls are golden brown and crispy, remove them from the oven and glaze with 2-3 Tablespoons of warmed sweet pepper jelly!
