Loaded Carnitas Nacho Fries

Ingredients
  

  • 26 oz frozen french fries
  • 1 ½ cups leftover pork carnitas
  • 1–1½ cups freshly shredded cheddar cheese
  • ¼ diced white onion
  • 2 small Roma tomatoes seeded and diced
  • 1 handful cilantro diced
  • prepared guacamole optional
  • sour cream optional
  • cotija cheese optional

Instructions
 

  • Bake or air fry 26 oz frozen French fries according to the package directions.
  • Once cooked, add the fries to a sheet pan, greased with a few spritzes of cooking spray. Season to taste with salt and pepper if needed (some fries come pre-seasoned).
  • Preheat your oven to 400°.
  • Spread 1 ½ cups leftover pork carnitas evenly over the fries, then top with 1–1½ cups freshly shredded cheddar cheese.
  • Bake the nachos for 8-10 minutes, or until the cheese is melted and bubbly.
  • Remove the pan from the oven, and top with ¼ cup diced white onion; 2 small Roma tomatoes, seeded and diced; and a handful of diced fresh cilantro.
  • Garnish with guacamole, sour cream, and Cotija cheese.
