Loaded Carnitas Nacho Fries

- 26 oz frozen french fries
- 1 ½ cups leftover pork carnitas
- 1–1½ cups freshly shredded cheddar cheese
- ¼ diced white onion
- 2 small Roma tomatoes seeded and diced
- 1 handful cilantro diced
- prepared guacamole optional
- sour cream optional
- cotija cheese optional
Bake or air fry 26 oz frozen French fries according to the package directions.
Once cooked, add the fries to a sheet pan, greased with a few spritzes of cooking spray. Season to taste with salt and pepper if needed (some fries come pre-seasoned).
Preheat your oven to 400°.
Spread 1 ½ cups leftover pork carnitas evenly over the fries, then top with 1–1½ cups freshly shredded cheddar cheese.
Bake the nachos for 8-10 minutes, or until the cheese is melted and bubbly.
Remove the pan from the oven, and top with ¼ cup diced white onion; 2 small Roma tomatoes, seeded and diced; and a handful of diced fresh cilantro.
Garnish with guacamole, sour cream, and Cotija cheese.
